    Today I also carved out some extra time to meal plan farther in advanced then I usually do. It’s nice to plan things out and not have to worry about deciding what to make or what ingredients I will need. It makes whole food meals have a lower barrier and also helps me with budgeting and making the most of ingredients/ use them in different ways. The Greek bowls I made for dinner will be great to have for the next few days and I can mix it up and add different things.

    Today I went on a rainy day mini hike, at first I wasnt looking forward to doing it ,but I ended up actually really enjoying it! My nanny kids and I had been planning on visiting fish and I almost postponed for better weather but we bundled up and had the best time! It’s been fun prioritizing time outside and adapting as the weather is changing. Starting to embrace “there is no such thing as bad weather just unprepared/bad gear” motto first hand.

    I donated food to our apartments shared food pantry. It’s a take what you need leave what you can system. It connects to my values by supporting my neighbors and sharing and supporting one another. I want to donate food because it’s a basic human right and I never want anyone to have to go hungry, especially when we produce so much food waste.

    Spending more time outdoors has made me feel more connected to and appreciative of my community. I think it can be easy to take all the natural beauty and special trails we have in Portland for granted because they are all around us. Spending more time enjoying them has made me appreciate them at a deeper level and realize how lucky and privileged I am to be surrounded by so many stunning, beautiful, public parks and trails. Also a lot of the parks and trails have land acknowledgments which helped me gain a deeper knowledge of the land I visited and appreciate the space even more!

    One thing Ive also liked about the Ecochallenge is getting my nanny kids involved with me by making extra effort to spend time outside together every day. We have done lots of color walks where we pick a color to follow and try and see how many things we can find of it outside in nature. Or color scavenger hunts where we find things already on the ground to match to swatches on a piece of paper. We have also done lots of chalk, playing at the park and water colors. Involving them has made me reconnect to my inner child and enjoy the process even more and approach it in creative ways I otherwise wouldn’t have. I think we have liked all the different activities equally on the same level, which is also cute because I didn’t expect to enjoy things like chalk just as much as a 3 and 4 year old. The picture I included is an example of one of our scavenger hunts but we used tape for it because their parents wanted to be able to save one and hang it up.

    Today I am really proud of myself because I tried making something new for the first time and used up some extra ingredient scraps that otherwise would have gotten old by cooking them down for a veggie stock for the pumpkin curry soup I made. I was extra excited because I always eat plant based/ vegan but my partner doesn’t, but he really liked the tofu I made and said they would pick it over chicken in this dish. The eco challenge has made me more mindful and creative in the kitchen which im thankful for and have really enjoyed!

    I heard the crunch of fall leaves under my feet as I walked, I smelled the damp fall air heavy with the scent of rain, I heard the rumble of cars passing by in the distance, I felt the crisp cool air on my face. ( My bunny I brought with me to enjoy the park)

    Rachel Carson said that we need the beauty and mysteries of the natural world for our spiritual and emotional development. Does that ring true for you? What are the implications for a culture that spends most of its time indoors?

    I think it is absolutely true for me. Whenever I feel overwhelmed or stuck in a rut for a chunk of time, I always go for a long hike to reset and reconnect. The natural world is very grounding and helps root our spiritual and emotional development in alignment with our Earth, to something that is bigger, wiser, and more powerful than ourselves and transcends human kind and time. A culture that spends most of its time indoors is disconnected from our roots, and from the natural world that has existed long before us, and will exist long after we’re gone. This disconnect can cause more anxiety and a loss of the importance and beauty that can be found in simplicity and the wild.

    I think it is a true statement and food really is medicine. The term “you are what you eat” has became more true for me because I’ve really noticed that when I nourish my body with Whole Foods I feel so much better and healthier than when I have meals of highly processed food. Instead of feeling sluggish and tired after eating I actually notice feeling energized and have a lot less bloating and headaches.

    An average American throws out about 240 lbs of food per year. The average family of four in the US spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?

    I am surprised to learn how much food waste the average American family creates. Meal planning and making more frequent, but smaller grocery trips has significantly helped me reduce my own food ways by ensuring I’m only getting what I need and know I will use immediately. I would rather do basically anything else with $1,500 than essentially throwing it in the trash each year.

      I do my best not to waste food. I'm pretty good at using up leftovers, and things like cores and peels either get used for broth or composted (or sometimes both). I did lose some food after the hurricane this summer left us without power for a week because all my frozen food thawed. While I was able to store it in a friend's refrigerator, we weren't able to eat it all before it got to the point where we thought we it was going off (there was no extra freezer room for us, unfortunately). However, I was able to compost the non-meat part of that, so it wasn't as bad as it might have been.
